The ultimate pulled pork joint. Either cook as is or use a smokey dry rub beforehand for smokey style pulled pork.
For the crackling make sure the skin is well scored, pour over a boiling kettle of water, thoroughly pat skin dry. Sprinkle generously with salt and then put in a screaming hot oven for 20-30 minutes until the skin has crackled. Turn the temperature right down to 130-140°C and leave to cook low ‘n’ slow for around 4 hours. Melt in the mouth delicious pulled pork incoming!
