Perfect for a Sunday Roast. This is one of the leaner cuts of pork and is perfect for feeding a crowd.
Roast at a high temperature for 25 minutes at around 230°C to start with to get the crackling then turn down to 160-170C and cook for one hour per kg of meat (for a 2kg joint cook for 2 hours). Rest for 20-30 minutes and then serve with your favourite roast veggies.
